Meanwhile, the younger kids see the rising costs and hear "the protections against paying back are ending" and realize that outside of STEM or degrees that need accreditation (Lawyers, doctors, accountants, etc)? Maybe it's not worth it to go 100k in debt and be unqualified to server at starbucks.

The real solution is to require in person registration of some sort. Verify you're a human. Requiring payments helps as well as it ties you to credit cards and the like but AI hasn't created human passing robots yet. (Yet, being the key word)

Well you shouldn't be using your phone without screen protectors and body protectors so get a screen protector that negates the glossy screen. Those are some of the easiest things to get and the best options aren't Apple branded and taxed.

We don't have the rest of the conversation (IE: Was the texted contract, thumbs up always followed by a physical contract signed? Sometimes? etc). But you're attributing malice to someone who could be factually and honestly simply saying "I agree... that you sent me a contract that we need to recieve and sign with an actual pen on paper". I don't think there needs to be a notary for contract law (even if you use one for documentation) but there does need to be clarity because even you agree that "thumbs up" has multiple meanings and "I agree to look at the contract" is not the same as "I agree that I received a copy" is not the same as "I agree to the terms of the contract". Or, as you say, " And the fact the 'thumbs up' is vague is nowhere a good enough reason to let someone out of a contract." - which can be summed up as "The fact that it's vague means it can't be relied upon to stand in place of a real contract". The only difference is you assume malice on the farmers part and reasonable people don't.
