Journal silent_rock's Journal: worse than Shaq 1
K showed me the PETA video for Go Vegetarian "Meet your Meat". Yes, it was gross. Maybe I will buy more tofu. I'm not sure. It's funny some people here are so adamant about bad seafood farming but not really about bad livestock practices. Too bad we don't live back in the 1800s and grow our own food on the farm. It could be very "Charlotte's Web"-like. I'm not sure if the sensationalist video will change my practices... But now I have a nice mental image of a bull being castrated. I do agree that as a society, our consumption of animal product is disgusting.
Got destroyed in bball tonight. We ended the season 2-5. I shot free throws worse than Shaq tonight. Worse than Shaq!! (1-6) Oh well, I thought it was fun. Even though I was destroyed.
I just wanted to go to sleep. But then I ate some kimchi. And now I am ready to make a backup of my computer. I just hope it finishes before I wake up... I am dying for USB2.
be. productive! be-be productive!
Here's spicy peanut sauce recipe bossy requested:
White Cut Chicken with Spicy Peanut Sauce (think of the poor chicken!!!)
Depending on how much lettuce you use, you can serve this as a salad or as part of an appetizer cold plate. The chicken is shredded rather than cut, so the rough edges absorb all of the spicy dressing.
1.5 pounds chicken breasts.
1 whole green onion, cut in half
1 quarter-size slice fresh ginger, crushed with the side of a cleaver
1 tablespoon dry sherry
1/2 teaspoon salt and sugar
2 cups water
1 to 3 cups shredded iceberg lettuce
and Spicy peanut sauce
Stir together 1.5 tablespoons creamy peanut butter and 2.5 tablespoons salad oil until blended. Stir in 2 tablespoons each soy sauce and sugar, 2 teapsoon white vinegar, 1/2 teaspoon sesame oil, 1/4 to 1/2 teaspoon ground red pepper (cayenne) and 1 tablespoon each minced green onion and fresh coriander (also called Chinese parsley or CILANTRO)
Place chicken in a 2-quart pan with the onion, ginger, sherry, salt, sugar, and water. Bring to a boil, cover, and simmer for 20 minutes. Remove from heat and let stand until chicken is cool enough to handle. Strain broth and save for soup. Remove and discard skin from chicken. Pull meat from bones, then pull meat in long shreds. If made ahead, cover and chill.
To serve, mound lettuce on a serving platter. Arrange shredded chicken over lettuce. Drizzle peanut sauce over all. makes 3-6 servings.
