It depends on the strain of yeast. And in the Sam Adams Utopias, they use many different strains, including at least one Champagne strain if I remember correctly. They use way more malt than your average beer, then they keep feeding it maple syrup until all the yeasties croak.

And no, it is not really a beer. It is tecnically a barley wine.
