Hmm, you're kinda reading it wrong.
This is a prototype for an academic research paper. It's not on the market, nor is it being sold anywhere. Plus the NYT article makes fairly broad statements not meant to be interpreted literally as precise measurement results.

The attenuation of low power ultrasonics is very very fast. The signal is not "audible" even to those sensitive more than a few inches away from the actual bracelet speakers.

The design is actually fairly generalizable.
Today's commodity mics generally use the same or very similar materials.
You're right that one set of harmonics does not address all, but perhaps 2 or 3 might address 99% of the available mics on the market.
