so are you following the instruction book's reccomended speed settings for kneeding dough?

perhaps you need the pro line? they have a 12 and 14 cup rated mixer.. although i've seen much larger rated industrial dough mixers... ;) but i worked at a pizza place that made it's own dough daily so...

  But they can rate it for whatever the fuck they want. It exceeds capacity mixing 6 cups and struggles with *anything* with wheat flour.
  
  Perhaps you're right. Perhaps I should upgrade. But for now, this is what I have. I wanted to pass the info along for anyone else in the same boat.

  And for as much money as I've already invested in the one I have, it's stupid to upgrade for 1 more cup.

    Hmmm...I'd been drooling over one of the professional ones myself - it's disappointing that they don't have the tilt head. I haven't looked too closely at them, though, because when I look too closely at something I tend to buy it.
    
    It sounds like a good recipe. I think I would probably use all wheat flour instead of the AP flour, just to try it - I have had fairly good luck doing that with other recipes, and we try to have as little white flour food in our house as possible. It probably will put a strain

      keep in mind she was doing 3 loaves of bread :) the kitchenaid mixer should do fine on 1 loaf, although bethanie's seems to strain under any amout of wheat flour (she never said if she had ever prepared a single loaf at a time so i don't know that for sure though)
