it's apples season. We just picked up some ambrosia apples- they're like candy, for those of you who haven't tried them- and some locally grown red delicious and mcintosh. (Save your computer jokes for another time. In MA, locally grown fruit is a real treat.)

I am NOT allergic to apples.

Thank gods.

We're gonna make caramel apples, to start with, and stuff like that.

So, let's talk apple recipes. Pie, of course, though GF crusts are my need where pie is concerned, that doesn't stop you sharing the recipes with each other. Cobbler, crisp, applesauce, apple strudel- what do you make when apple season rolls around?

One thing i like to do is grate them into pancakes, and have recently gotten similar results by adding apple syrup (boiled down cider, basically) to waffle mix with a whol lot of cinnamon and nutmeg.

Also, tsimmes, where you bake the apples with honey and raisins- those are a holiday treat, doncha know. New year and whatnot.

I'd like to find an equivalent recipe for raisin squares, where you bake layers of pie crust with a layer of raisins in the middle. I might pick up a GF pie crust mix and give it a try, they'll be mealy as heck but should taste good if i make the layers VERY thin. Those are good with chopped apple in them, too.

MMMM, apples. And we'll have a car, so i can drag teh blinders out apple picking.

    At first I thought, pickled apples are good (though I don't have a recipe). Then realized my reading error. Living where I do, it seems so foreign to pick apples because they come in plastic bags from grocery stores. Citrus on the other hand, comes from trees (or at least used to until the department of agriculture claims your trees are "blighted" and charge you to cut them down).
  • When I was back at university, we had an apple-picking outing followed by an apple bakeoff. I made up a recipe for apple pizza. I started with a yeast-risen dough with a little extra sugar and some cinnamon, then made some fresh applesauce with warm spices (cinnamon, a touch of cloves and a little allspice), topped it with thin apple slices and walnut halves (arranged like regular toppings), and topped it with mozzarella. I got the idea from the first time my ma showed me how great mozzarella tastes with
    • I should remember next time that I have a block of caramel that I haven't done anything with that I can melt it down and cover apples with it...it's a lot easier than cutting and wrapping pieces!

      Omigosh, but now I'm really craving candy apples with lotsa nuts-- chopped pecans and then drizzled with dark chocolate! Turtle apples!

  • And I don't think it's just because he's on after that poser Rachael Ray. In his recent apple episode, he made these [foodnetwork.com]. Yum.

    I didn't (and won't) go apple picking this year, but I still hope to pick up a sizeable quantity of honeycrisp apples. Despite apparently being "good keepers" they're not available the rest of the year. :^( If I do acquire lots of apples, I will be making apple cake, apple pie, and apple crisp. They're also really good just baked with some cinnamon and honey or sugar. Mmmmm...apple

    • I made a peanut butter and apple pie once. Found the recipe on foodtv.com. I'll post when I get home if 1)I remember and 2)I can find it. Can dragons eat peanut butter?
  • Apples already are. There is nothing more satisfying than sitting down and eating an apple with your bunny.

    Silly dragon- you picked red delicious! Why!? You can get those anytime! It's apple pickin' season, you branch out and try the varieties that aren't in your local grocery store (the ambrosias are more like it).

    My favorites are the ever elusive Macoun [wikipedia.org], with a "sweet taste with a hint of berry", why Wikipedia, I couldn't say it better myself.

      Because, in an ironic twist, the ambrosia apples were hothoused/shipped in, and the red delicious were locally grown.

      How do you feel about orange pippin??

        what about gilliflower? Or northern spy? I'm profoundly fond of northern spy.

      • I can honestly say I've never heard of a gilliflower or an orange pippin, you folks have some fancy apples out east. My other favorites are the Northern Light and Goodland varieties (see how unpretentious our midwest apples are). But Macoun are my true love. I'm hoping to get some at the farmer's market this weekend.

        A northern spy, though. I love those. I haven't had one in a while, but they are really popular in the orchards in northern Wisconsin. The prairie spy is the one that is popular around the citie

          • honeycrisp apples are one of my 3 favourites.

            THat's saying something, considering i have personally tried more than *counts on fingers and toes and runs out of digits* let's say more than a few kinds of apples.

            I LIKE APPLES, that's why.

            oh, let's see, there's yellow and red delicious, granny smith, macintosh, and that's all of them that most people know about! Particularly adventurous relatives of mine have tried gala and pink lady!

            • I found this list [applejournal.com] of apple varieties. I'm pretty sure it's not exhaustive, but it's a fun reference.

              My parents bought some pink ladies and empire apples from some amish people on the side of the road last year. It was the first time that I had eaten either variety, which we don't have in MN. They were both pretty good. Galas are pretty common in the orchards here, but I don't usually buy them. I also don't mind haralsons and cortlands; they work well in pie, and any friend of pie is a friend of mine. :

      I have widely disseminated opinions on red delicious apples that I will not get into here. Maybe I should get a spot on Katie's "Free Speech."
  • I just returned from a visit to the Minnesota Harvest apple farm myself. Love apples, and things with apples in them.
