The sweet potato. Or as I like to call it, Ipomoea batatas.

It's only been around since before man. :)

Sweet potatoes can be baked, boiled, fried, broiled, canned, grilled or frozen. They can also be cooked in the microwave oven, although they never seem to get done enough or end up scorched on one end.

My favorite way to eat them? Scrub down a couple, stab them a few times with a fork and pop them in a 400degree oven for 15 minutes. After 15 minutes, drop the heat to 375, rotate them and cook for an additional 45min to 1 hour. Butter (I used a butter sub for now) and enjoy. You can also mash them up after baking. YUM.

And remember:

it is what you add to the sweet potato that increases calories.
1 small, baked in skin ...............................141 calories
3 1/2 ounces, candied................................168 calories
3 1/2 ounces, canned, syrup pack.........114 calories

    The first thing to come to my mind when I saw "sweet potato" was pure disgust. I've always disliked sweet potatoes/yams, and other veggies similar in consistency.

    So much in fact, that I haven't eaten them in over 15 years. However, as is the case with so many things, your tastes evolve over time, so I think I'm going to have to hit the produce aisle and grab some sweet potaters, and give the poor buggers a second chance...

  • My Mother makes the best sweet patato pies. dang it, now I have a sweet 'tater pie craving, Im gonna have to go dig up that recipe tonight.
  • It was early 2001, I was in the #6 subway going downtown, it was rush hour. We were packed in like sardines. I had a big double corona cigar in my shirt pocket that a colleague had given to me when I left work. For those who don't know, this is a huge cigar, of the length and ring-size that the 42nd President enjoyed, though I doubt it was his brand, his were probably much more expensive.

    We stop at 86th street, I am standing, I step out of the way of those leaving and entering and stare at the floor or

    • Two somewhat (differently) similar stories:

      1) A female friend in Los Angeles was running along the Santa Monica bike path when John Ritter came riding a bicycle in the opposite direction. He smiled at her like "Yeah, I see that look every time I ride here."

      2) My brother (fairly liberal, not sure why he was so lit up about this) got on a DC-NY shuttle flight around the time of the Marc Rich pardon. He and the woman next to him spend the whole flight fuming about what a scumbag Clinton is. They land in New

    Heaven.

      Just an idea for a variation, dessert-wise.

      Typically, I'm just a plain, no butter swee'tater person, myself -- but they'd make a damn fine dessert. Think I'll go get a couple roasting now!

        You don't like anything on a sweet potato at all huh? Seems a *little* plain for me I guess, but not horrific. They are pretty tasty.
        • Yup. Just plain nekkid. Baked until they caramelize around the inside of the peel. Take a good 90 mins or so, but it's SO good, and good for you! They are the first solid food I gave to Kiddo, and I'll do the same with Squirt.

  • I often end up putting more brown sugar on it than the total mass of the sweet potato.
