treat everyone as an adult

Uh huh, that'll work. Grades are both feedback to the student and an artificial reason to actually do the work, and it was done that way because there is a short supply of people who are completely self-motivated and need neither carrot nor stick. In engineering you learn that mistakes become much more expensive the later they're found in the development process. Allowing students to cheat with AI, assuming they'll fall flat on their faces when they will be entering the work force, is one way to let a mistake fester and become prohibitively expensive. Turning a blind eye to cheating is a dereliction of responsibility.

people pay for costmetic items in games just to look different from other players, so, yes, people will absolutely pay for this stuff. I imagine a lot of those people will be kids though, tbh.

I like that you wrote "costmetic". All of these people are kids. Some are adult-aged, but they are all mental infants. And if anyone believes there isn't a market for this, may I remind you of the Crazy Frog? From Wikipedia: "Jamba/Jamster boomed—when VeriSign bought the business it had a turnover of $15 million per quarter and 3 quarters later this increased to $150 million a quarter—in 2005, the company made close to $600 million in revenue." A fool and his money are soon parted.
