The alcohol in bread does not evaporate. According to a report from Cornell College, Iowa (http://www.pubmedcentral.nih.gov/articlerender.fcgi?artid=1709087), the alcohol content in twelve samples varied from 0.04 to 1.9 per cent.
The reason that the levels are lower than in beer or wine is that the sugar content is lower.
