The problem isn't when they're picked, it's the cultivar. They're optimized for even ripening, longevity (thick skins), and truly extreme yields.
This is why heirloom tomatoes are so much more appealing then generic chain grocery tomatoes. If you get heirlooms the shoulders, the part near the stem, will not necessary look as ripe as the rest of the fruit. Breeding for uniform ripeness and thick skins decreases flavor and texture.
Buying heirlooms at chains, even the high price ones, is no guarantee of good flavor. The intrinsic shorter shelf life and thinner skins make the supply chain/shipping effects more noticeable.
If you get small cherry/grape tomatoes, even at a big chain, you will have a much better shot at getting good flavor and texture. You loose having a nice big juicy slice, but the flavor is much more likely to be good.
Never refrigerate tomatoes, it ruins them. Better to have them get overripe/soft then the flavor/texture destruction of refrigeration below 7-10C/44-50F.

The pack of hyperscalers is holding $1.2 trillion in future lease commitments along with $1.5 trillion in commitments to purchase AI-related hardware and equipment, such as memory chips. The latter can be kept off a firm's balance sheet until the products ultimately reach the hyperscalers and each party fulfills its obligations under current accounting rules.
